Lebaksiu: An Origin of Martabak

My journey has led me to the heart of Lebaksiu, a village where tradition and modernity entwine in the most delicious way possible through Martabak. More than just snacks, the story of Martabak is one of cultural fusion, friendship, pride, and an enduring legacy.

In the early 1930s, an Arab trader’s friendship with a Lebaksiu youth sparked a culinary transformation that would forever change the landscape of Indonesian street food. Together, they took the essence of Muttabaq, a wheat-based Arab snack, and modified it into Martabak – a mouthwatering delicacy fragrant with spices, wrapped in the comforting embrace of the egg. The secret recipe continues to be passed down until now.

Lebaksiu stands at the crossroads of tradition and industrialization, with over 3,200 native residents spreading these delicacies across Indonesia, a testament to this village’s resilience and community spirit. Martabak’s influence is felt far beyond its taste, as it has contributed to the growth of Lebaksiu, funding the construction of grand mosques and finally enlivening the village with well-known minimarket outlets.

This series invites you to embark on the history, culture, and flavors of this remarkable place, where the past and present harmoniously blend, much like the flavors of Martabak itself.
